What does a whole new way to cook food mean?
Food preparation is moved from the hob (open cooking) to the oven (closed cooking), which is a trend within the professional catering industry. High temperatures (230°C) and rapid cooking times give a desirable seared surface and the food doesn’t get a chance to dry out. It gives succulent and delicious results.
Completely new? What is its track record?
iPinium products have been around for ten years on the professional market and are therefore well proven. All the large international oven manufacturers buy iPinium products today.
What is iPinium made of?
iPinium consists of a patented aluminium alloy, that is to say a blend of mainly aluminium with additives that make the material retain heat. iPinium fulfils all hygiene requirements for food preparation equipment.
Why is it so easy?
All you need to do is place the iPinium GSB on the oven’s own rack and set the correct temperature, normally 230°C. The GSB acts as a heat buffer that means the temperature does not fall under the temperature needed to produce an attractive seared surface. This is not possible with the enamelled oven trays that are still standard in all ovens.
How does iPinium work in a household oven?
Household ovens differ from professional ovens in that they are normally limited to 3500 W. iPinium absorbs and stores heat, which is then effectively transferred to the food or dough, giving a seared or a baked surface. Food does not dry out thanks to the high temperature (230°C), which helps to seal the upper side of the food and by doing so, retain moisture.
What are the dimensions of the iPinium GSB (Grill-Roast-Bake) (or ”Grill-Sear-Bake”) and UP (Universal Roasting Tray) (or ”Universal Pan”) and why?
The dimensions are 354 x 325 mm, and are equivalent to Gastronorm 2/3. GN (Gastronorm) 1/1 is a measurement used in professional catering. The dimensions of the GSB have been developed to fit all household ovens that are at least 60 cm wide.
Do the iPinium GSB and UP work in all electric household ovens?
Yes. If available then use the fan-assisted mode as this allows for a larger weight of food to be cooked. They also work using conventional top and bottom heating but with lower weight capacity. The grill function can not be used.
Gas oven?
Yes as long as the temperature can be adjusted to 230°C. This can be a problem with older stoves.
Modern steam ovens?
They work, but do not use the steam function.
Fan-assisted or conventional top and bottom heating?
We work on the basis of fan-assisted cooking if it is available and thus the possibility to use two GSB/UP’s in parallel in the oven, with a total maximum food load per GSB/UP of 800 to 1000 g excluding potatoes and vegetables. Conventional top and bottom heating also works, but only one GSB/UP can be used with a maximum food load of 600 to 800 g excluding potatoes and vegetables.
How is the food prepared before being cooked on the GSB/UP?
All food ought to be at room temperature and dry to ensure the desired seared surface is achieved. Water, fat and low temperature will compromise the development of a seared surface. This is not the case for frozen pizzas and hamburgers that should never be defrosted before cooking.
Cooking oil?
Cooking oil never needs to be used on the iPinium GSB or UP. The cooking method ensures a succulent result, and the high quality non-stick coating means that nothing sticks.
How does the GSB sit in the oven? Why is there no lip around the edges, and what do you do with pan drippings?
The GSB is smaller than the oven’s trays and should be placed on the oven’s grilling rack. Too much juice around the food compromises the seared surface and should therefore be free to run off. It is recommended that an oven tray covered in aluminium foil is placed under the GSB to catch any drippings from the food.
Why should the GSB always start out in the oven at 230°C?
Preheating the GSB gives the best possible conditions to achieve a seared surface, even when cooking the maximum weight of food.
Can you rely on the oven being hot enough?
The answer is generally no! It is therefore recommended that you wait 20 minutes from when the GSB is placed in the oven until you start to cook, even if the oven indicates the temperature has been reached sooner. Feel free to use a simple thermometer, placed in the oven, that can be read from outside the oven, to confirm the actual temperature.
How do you clean iPinium products?
They are coated with a high quality non-stick coating that makes cleaning very easy. Hand wash in warm water with washing up liquid and a plastic dish brush, or alternatively wash in the dishwasher.
Is the high quality non-stick coating sensitive/which utensils can be used?
Only use plastic or wooden heat-resistant utensils that do not score the coating.
How can such good seared surfaces and baked bread and pizza be achieved in the oven?
The answer is simple, transfer of high temperature heat from the iPinium GSB and the UP into the food or dough.
Seasoning before or after cooking?
Either. Latest experience shows that seasoning food with salt, pepper and spices before cooking is preferable.
Marinading?
The surface of the food in contact with the iPinium GSB/UP should be as dry as possible, it is recommended to dry off the surface that has been marinaded and that comes in contact with the plate using kitchen paper before cooking.
Oven cleaning?
Intensive use of the oven obviously requires regular cleaning, not least because food such as salmon and other fish smells can affect the taste or aroma of other cooking or baking.
Aluminium and food preparation?
We have worked hard to develop iPinium’s aluminium alloy within the limitations set by the Swedish National Food Administration. Furthermore, iPinium is coated with a high quality non-stick coating.
More iPinium products?
iPinium’s oven product range will be extended in the future. Our goal is to replace today’s enamelled steel trays with iPinium products in the long run.
Can you cook frozen food with iPinium?
Latest experiences and tests show that it works outstandingly well! Place frozen food on the GSB or UP (which should be at room temperature) then put into a preheated oven (230 C). The food will immediately start to defrost and you should add 10 minutes to the normal cooking time to allow for this. Even food cooked from frozen will end up with a beautifully grilled/roasted surface to be displayed on your plate Additional facts and information will be added when available…
